Associate Professor Patrick Silcock is a food chemist/sensory scientist and is manager of the Product Development Research Centre based in the Department of Food Science at the University of Otago. He has co-authored 78 peer reviewed journal articles and co-supervised 23 PhD students. His research interests centre around factors influencing food quality and particularly flavour perception and flavour generation.
